Red onions are remarkable regarding the endless battle against age. Usually under rated, onions have layer after layer of benefits.

The Key is in the Quercetin

Red onions are an excellent source of quercetin.  Querce-WHAT?  Okay, to keep things simple, Quercetin is a bioflavanoid (this is like a super antioxidant of sorts) that basically gets rid of those nasty free radicals that definitely do damage and speed up aging. Wait, there is even more.  Quercetin helps keep you healthy too.  Studies have proven that Quercetin boasts of it’s anti fungal, anti bacterial, and anti inflammatory properties.  Believe it or not, it can even help FIGHT (unfortunately not CURE) cancer.  It is also great to help prevent the common cold.

Allcin, put simply, is pretty much a health promoting compound.  It can lower blood pressure, it is good for the heart, and it has also shown promise in the prevention of cancer too.


Red onions are also full of vitamin C, potassium, folic acid, and fiber- not to mention calcium, iron, protein, sulfer, and flavanoids too. That means that red onions are good for the intestines as well as your bones.

What You Need:

  • 1 bay leaf
  • 1 large red onion (sliced)
  • 1 can of tuna (drained)
  • Salt and pepper (black)
  • 1 cup of cherry tomatoes (sliced in half)
  • 1 cup of cannellini beans (soaked overnight)
  • 1 cup of French green beans
  • 3 tablespoons of chopped parsley.


  • 6 tablespoons of extra virgin olive oil
  • 1 tablespoon of tarragon vinegar
  • 1 tablespoon of tarragon mustard
  • 1 teaspoon of grated lemon rind
  • 1 garlic clove

 What To Do:

Drain the bean and boil them in fresh water with the bay leaf for a good ten minutes under a high flame.  Reduce flame and leave for about an hour. While waiting, make the dressing by mixing everything together and whisk away.  Add salt, pepper and lemon to taste. Drain and discard bay leaf. Place beans in the bowl along with half do your dressing, the onions, and parsley. Mix and toss. Add tuna and cherry tomatoes. Mix and toss. ENJOY!
