Anti-Aging Soup - Anti-Aging Foods Anti-Aging starts from within and what you eat not only does your insides good but also shows on your outside. Good skin, hair, nails and other “face value” signs of youthfulness benefit when we eat nutritious foods high in anti-oxidants. One such food or meal is the famous Spanish soup known as Gazpacho. It's super tasty and makes a great meal during the Summer as it is traditionally served cold. What's more, it's really easy to make...cue the blender ! Gazpacho Recipe
  • 1 kg of tomatoes
  • 1 clove of garlic
  • 1 red pepper
  • 1 cucumber
  • table spoon of red wine vinegar
  • slice of bread (save your stale bread)
  • half an onion
  • red chilli
  • any fresh herbs
  • a few glugs of olive oil
  • salt
  • pepper
The cool thing about Gazpacho is that the ingredients and the quantity of each ingredient doesn't really matter. It's basically a tomato soup but outside of that, add whatever tingles your taste buds. How to Make It First step is to soak the bread in the vinegar. Set aside for 5 minutes or until the vinegar has soaked into the bread. Next, blanch the tomatoes. Boil some water and place in a pan with your tomatoes. Cut a x mark in the skin of the tomatoes before  placing in the pan. This will make it easier for the skin  to come away from the flesh. After about 5-10 minutes the skin should just come off the tomatoes.  Cut in half and remove the seeds. Set aside. Now de-seed the red pepper, cucumber and chilli. Roughly chop them up. Same goes for the onion and garlic. They can offset the tomato taste and give the soup a layer of tastes. The chilli can also give it a bit of a kick. If you don't like hot food then omit the chilli. Put a mix of all the ingredients into your blender and blend for 20 or so seconds. Do this in batches if your blender is too small. The length of time that you blend the ingredients determines the texture of the soup. Add salt and pepper to the soup to suit your taste. I like it quite “rustic” or chunky so don't blend it very long. Others may like it smoother so would have to “blitz it”  for longer. Place the blended soup in a pouring jug and place in the fridge or freezer. When it is cold, it's ready to serve. Drop a few ice cubes in it to add more texture and keep it refreshingly cool. Why is Gazpacho good for you ? Tomatoes are the main ingredient in the soup. They are high in an anti-oxidant know as Lycopene. Anti-oxidants bust free radicals that roam around in the body looking to cause trouble. Fresh herbs like mint, rosemary and oregano are also high in anti-oxidants. Garlic is thought to have many benefits, in terms of anti-aging, it's also an anti-oxidant but also an anti inflammatory (inflammation can cause cells and organs to breakdown and malfunction). It's also  thought to slow down the decay of cells. Garlic may also make blood move around the body  meaning that nutrients supplied by the blood get to all parts of the body. Onions are thought to have similar benefits as they are related. Chilli and red peppers can also act as an anti-inflammatory. Best of all, all these ingredients are fresh and refreshing. They will deliver heaps of nutrients and  keep you hydrated in the process. Yes, this soup can also give your body some of the water content it needs to keep it functioning properly. Dehydration can lead to cell damage. And most people don't know  that they are dehydrated most of the time.
